After some research I eliminated VLC source and it helped but ultimately only delayed the performance breakdown as it still occurs. Digging into stats I realized OBS was creeping up to 9-14 Gigs of ram for a very basic setup (4 scenes no more than 5 sources each). I assumed it was my laptop (which was a 2015 Macbook pro) I upgraded to a new Macbook with 64G of Ram and i9 processor. I've been dealing with the issue for nearly a year after upgrading.
